For those familiar with chiffon cakes, you’ll notice that this recipe differs from traditional chiffon cakes. It doesn’t include milk; instead, it uses egg yolks to provide the liquid component and condensed milk to impart a milky flavor. Additionally, it employs the hot milk method, which I find to be the least likely to cause the cake to crack, resulting in a rich and delicious cake.

Step 1: Gather All Ingredients

Begin by gathering all the ingredients needed for the cake.

Step 2: Sift the Cake Flour

Sift the cake flour into a large bowl.

Step 3: Mix the Cake Batter

In a separate container, microwave the corn oil for one minute and then pour it into the sifted cake flour. Use a hand whisk to combine thoroughly.

Step 4: Prepare the Egg Yolk Mixture

In a separate bowl, combine 80g of whole egg liquid, 4 egg yolks, condensed milk, and a few drops of lemon juice or white vinegar. Add each ingredient one by one, ensuring that the mixture is smooth and even after each addition.

Step 5: Beat the Egg Whites

In a large mixing bowl, beat 4 egg whites with a few drops of lemon juice until they reach the stages of coarse bubbles, fine bubbles, and soft peaks. Gradually add the granulated sugar (with 3g of cornstarch mixed in to stabilize the meringue) in three parts. Continue beating until stiff peaks form.

Step 6: Combine Egg Yolk and Meringue

Gently fold the egg yolk mixture into the meringue in three parts. Use a folding motion to ensure the batter is smooth and free of lumps.

Divide the cake batter evenly into four bowls. Add a few drops of food coloring to each bowl and mix thoroughly. Pour each colored batter into separate silicone cake molds.

Step 8: Preheat the Oven

Place the filled silicone molds on a baking rack in the middle of the preheated oven and bake at 120°C (248°F) for 60 minutes.

After baking, allow the cakes to cool in the molds, then gently remove them.

Allow the cakes to cool completely to room temperature to prevent the frosting from melting.

Step 12: Prepare Whipped Cream Frosting

Whip the heavy whipping cream and granulated sugar until it reaches a light and fluffy consistency. Use it to frost the cake layers, adding your choice of fruit between the layers.

Step 13: Prepare Buttercream for Piping

Soften the butter to the point where it can be easily indented with a finger but not liquid. Then, add 5g of granulated sugar to the softened butter and mix until it becomes lighter in color.

Step 14: Color the Buttercream

Divide the buttercream into four portions and color each portion as desired.

Step 15: Decorate the Cake

Pipe the colored buttercream onto the cake to create a rainbow pattern. Sprinkle sugar pearls and add any additional decorations you like.

Next, I will share a recipe for homemade chiffon cake slices using silicone molds. It is suitable for four-inch and six-inch silicone molds. Here are the steps to make this cake:

Steps for Making a Cake Using a Silicone Mold:

1. Separate the egg whites and egg yolks, and refrigerate the egg whites for later use.
2. In a bowl, stir together the egg yolks, milk and corn oil until no more oil is visible.
3. Add the well-beaten egg yolk mixture to the flour and baking powder and mix evenly until a smooth batter is obtained.
4. In another bowl, beat the egg whites with a few drops of lemon juice and add sugar in three portions (you can use erythritol or white sugar). If you want the cake to be softer, don’t whip it too dry, just leave a sharp hook.
5. Take one-third of the meringue, add it to the flour batter, stir gently and pour it back into the bowl of meringue, and stir quickly evenly.
6. Pour into the silicone mold and fill it until two-thirds full.
7. Preheat the oven to 150°C, place in the middle rack of the oven, and bake for about 20 minutes, or until the top of the cake is lightly colored.
8. After taking out the cake, turn it upside down to cool, then unmold it.
9. Spread, decorate or decorate the cake with whipped cream.

Tips:

– If you want to flavor the cake, such as matcha or black tea flavor, mix the flavoring with milk.
– For example, to make black tea chiffon cake, mix 15 grams of concentrated black tea liquid and 30 grams of milk, which is equal to 45 grams of milk.
